Resumo

RESUMO O oferecimento de comidas rituais aos deuses africanos fortalece os laços sócio-religiosos e éticos que unem os adeptos dos cultos afro-brasileiros e contribui para o aumento dos elos mágicos entre os crentes e os deuses. As atitudes rituais e maneira de preparar os alimentos estão repletas de sentidos religiosos e significados sociais. Os alimentos desempenham suas ações socializantes mantendo os grupos em atitudes de divertimento e fé. No panorama culinário afro-brasileiro, não podemos nos condicionar exclusivamente à cozinha afro-baiana que é expressiva mas não monopolizadora, onde encontramos variações, detalhes e simbolismo entre os terreiros de xangô em Pernambuco, Alagoas, Sergipe e as Casas de Minas e Nagô em São Luís no Maranhão, entre outras. Após as danças rituais dos orixás, voduns e inkices, as comidas são servidas e todos os adeptos ou visitantes são convidados a consumir os assados das carnes dos animais que foram sacrificados em honra dos orixás. Não há cerimônia de cunho privado ou público onde a comida não esteja presente. Os alimentos constituem caminhos importantes para agradar, aplacar, invocar ou cultuar os deuses africanos. Seu preparo é entregue aos cuidados das iabassês, que se dedicam com votos religiosos. O relacionamento entre o crente e o santo é mantido através da alimentação que é específica para cada santo. The offering of ritual food to the African divinities strengthens the socio-religious and ethical laces that join the followers of the Afro-Brazilian cults and contributes to the increasing of the magic connections between believers and their divinities. Ritual attitudes and way of preparing food are full of religious senses and social meanings. The food carries out its socialized actions maintaining groups in attitudes of amusement and faith. In the Afro-Brazilian culinary area we can’t exclusively condition ourselves to the culinary from Africa and Bahia that it is an expressive example, but not the only one, because we find in it, variations in the symbolisms amongst voodoo rite yards in Pernambuco, Alagoas, Sergipe e Minas and Nagô houses in São Luís in Maranhão, among others. After the ritual dances of the “orixás”, “voduns” and “inkices” (religious cults) the food is served and all the visitors and followers, are invited to eat the roast meat of the animals which were sacrificed in honor of the the “orixás” (divinities). There is not any private or public cerimony where there is not food. The food constitutes important ways to delight, to calm, to invoke or to worship the African divinities. Its preparing is under the wing of the “iabassês” (cooks that prepare the food) who devote themselves with religious vote. L’offre des nourritures aux dieux africains renforce les liens socio-religieux et éthiques qui unissent les adeptes des cultes afro-brésiliens et contribuent à l’augmentation des liens magiques entre les croyants et leurs dieux. Les attitudes rituelles et la façon de préparer les aliments sont pleines de significations religieuses et sociales. Les aliments accomplissent leurs actions socialisantes tout en entretenant parmi ces groupes des attitudes de divertissement et de foi. Dans le panorama culinaire afro-brésilien, on ne peut pas se borner exclusivement à la cuisine africaine de l’Etat de Bahia – qui est un exemple très expressif, mais pas le seul – vu que l’on y rencontre des variations de préparation et de symbolisme, selon qu’on a affaire à des “terreiros” (maisons de culte) de xangô à Pernambuco, Alagoas ou Sergipe, ou à des maisons de “minas” et de Nagô à São Luís do Maranhão, parmi d’autres. Après les danses rituelles des “orixás”, “voduns” et “inkices” ces aliments sont servis et tous les adeptes ou visiteurs sont invités à consommer les rôtis des animaux qui on été sacrifiés en l’honneur des “orixás”. Il n’y a pas de cérémonie de caractère privé ou public où la nourriture ne soit présente. Les aliments constituent des moyens importants pour plaire, apaiser, invoquer ou établir le culte aux dieux africains. Leur préparation est confiée aux soins des “ibassês” qui s’y consacrent par des voeux religieux. Les rapports entre le croyant et le saint sont entretenus par l’intermédiaire de l’alimentation, qui est spécifique à chaque saint.
